Energy Bars

These bars are complimentary in the lobby of the spa and are included in picnics and flyfishing expeditions from the hotel. The recipe is often requested and shared with guests. Yield: 1 sheet pan.

¾ c         granulated white sugar
¾ c    light corn syrup
6 T    honey
1 ¼ c         smooth peanut butter
zest of 1 orange
1 c     rolled oats, toasted
½ c         sesame seeds, toasted
1 c     dried apricots, chopped
1 c         golden raisins
1 c     dried cranberries
1 c     sliced almonds, toasted
1 c     wheat bran, toasted
3 T    nonfat powdered milk

Combine oats, sesame seeds, apricots, raisins, cranberries, almonds, wheat bran, toasted coconut and milk powder. In a large saucepan, combine sugar with the corn syrup and honey and bring to a full boil, cooking for one minute. Add peanut butter and orange zest. Stir in dry ingredients. Transfer to a cookie sheet lined with parchment paper and roll out evenly. Let it cool and cut into bars.
