Cheese Popovers

 

Makes about 2 dozen

1 c          flour
½ c        water
½ c        whole milk
1 stick    butter
½ t         salt
4             eggs
1 c           grated cheese

Position a rack in the lower third of the oven and preheat to 425°. Combine the water, milk, butter and salt in a large saucepan. Bring the mixture to a full boil over medium heat. Add the flour all at once and stir vigorously with a wooden spoon until the mixture pulls away from the side of the pan. Continue to stir the mixture on the heat for about a minute.

Transfer to a bowl and let cool for a few minutes., stirring occasionally. Beat in the eggs, one at a time, by hand with a wooden spoon or on a low speed in a mixer. Make sure the paste is smooth and shiny before adding the next egg. After all the eggs, stir in the cheese. Sharp cheddar or Swiss both work well.

Drop with a tablespoon onto parchment covered baking tray. Bake until completely golden for the popovers to maintain their shape, about 20 minutes. Turn the oven off and allow the popovers to remain inside for a few minutes to assure they are done.
