Olive Oil Bread

 

This dough may be formed into 2 loaf shapes or rolls for sandwiches, pizzas or calzones.

1½ c      warm water
4 T         olive oil
1 T          honey or sugar
1½ T      yeast
1 t           salt
4 c         unbleached flour

Combine the warm water and the sweetener in a mixing bowl. Sprinkle in the yeast and stir until dissolved. When the yeast starts growing and rises to the surface, add half the flour and beat until smooth and shiny. Add the oil, salt, garlic and another cup of flour. Stir in, then add the rest of the flour and knead lightly for a few minutes.

Let the dough rest for about 15 minutes. If you are going to use the dough for pizzas or calzones, assemble the toppings during this time. Assemble the loaf pans or trays. Preheat the oven to 400°. Then, punch down the dough and knead until smooth. Shape into loaves or rounds or roll shapes.

Pizzas or calzones need to go directly in the oven. For loaves or rolls allow about 10 minutes for rising before baking. Loaves would take the longest to bake, about 30 minutes. Tap on the crust for a hollow sound to see if they are done.
